BORN Ginsen is a Junmai Daiginjo brewed with 100% Yamada Nishiki rice from Hyogo's Special A district, polished to 50%. After fermentation, it is cold-matured at around −10°C for approximately one year before being gently pasteurised and bottled, preserving its characteristic floral, bright, and clean profile. As the entry point to the BORN range, Ginsen offers exceptional quality for a Junmai Daiginjo.
Culinary affinity: A versatile food sake — naturally associated with sashimi, sushi, steamed seafood, and lightly seasoned Japanese cuisine.
