Six Expressions from One Rice: The Distinct Personalities of Six BORN Sakes

Place these six BORN labels side by side, and differences in polishing ratios and maturation periods immediately stand out. Yet numbers alone do not reveal the character of each sake.
One begins with a pale golden hue. Another is built around the fullness of umami. In some, aroma makes the first impression; in another, strength remains through the finish. What distinguishes the six is not simply a matter of higher or lower figures, but the particular quality each sake brings into focus.
One Shared Starting Point
BORN is produced by Kato Kichibee Shoten, a brewery that has been making sake in Sabae, Fukui Prefecture, since 1860. All six labels featured here are Junmai Daiginjo made with contract-grown Yamada Nishiki rice from Hyogo Prefecture's Special A districts. They share the same brewery and the same rice variety.
Even so, the six sakes do not point in the same direction. Color, aroma, breadth of flavor, smoothness, freshness, and finish: each focuses on a different characteristic.
BORN Gold: A Pale Hue That Reveals Its Craft
The first impression of BORN Gold is its pale golden color, in harmony with its name. This unfiltered Junmai Daiginjo is pasteurized immediately before shipment. A clear aroma is joined by a distinct presence of flavor and a refreshing quality.
Here, color is more than a visual detail. Two aspects of its production, the unfiltered finish and pasteurization before shipment, coexist within the same sake, and the pale hue helps make that craftsmanship memorable. The individuality of BORN Gold lies not in decorative extravagance, but in the relationship between the sake's color and the way it is finished.
BORN Ginsen: Putting Umami at the Center
The phrase that defines BORN Ginsen is hojun umakuchi, a rich style centered on savory umami. Hojun suggests richness of both aroma and flavor, while umakuchi points to a flavor profile built around umami. Rather than measuring the sake along a single sweet-to-dry scale, the expression draws attention to the fullness of its flavor.
Ginsen's character lies not in isolating a single striking aroma or sharp edge, but in allowing the whole sake to be understood through the fullness of its umami. Among these six labels, it offers an introduction to BORN through depth and substance of flavor.
BORN Tsuya Nakadori Junmai-Daiginjo: Aroma That Opens Up the Experience
BORN Tsuya Nakadori Junmai-Daiginjo is distinguished by its expressive aroma and breadth of flavor. The impression begins with aroma and continues into a wider flavor profile. Together, these qualities echo the impression carried by the name Tsuya.
Like Ginsen, Tsuya is polished to 50%, has an alcohol content of 15%, and incorporates sake matured at or below 0°C in its blend. Ginsen places the emphasis on umami, while Tsuya draws attention to aroma and expansiveness. The two show how different expressions can emerge from brewing conditions with much in common.
BORN Tokusen Junmai-Daiginjo: Citrus Aroma and a Firm Structure
BORN Tokusen Junmai-Daiginjo begins with an aroma reminiscent of grapefruit before the impression shifts toward structure, smoothness, and depth.
What matters here is not the citrus aroma alone. Bright fragrance coexists with a firm flavor structure, while a soft texture is paired with a sense of depth. Elements that may at first seem opposed sit side by side within the same sake, creating the distinctive outline of Tokusen.
BORN the Earth / Hoshi: Clarity and Depth in One Expression
BORN the Earth / Hoshi is characterized by a crystalline aroma and a flavor that is both deep and refreshing. Clarity and depth can appear to sit at opposite ends of a spectrum, much like lightness and weight. Yet this sake does not lean exclusively toward either side; it brings the two together as a single expression.
Its aroma is clear, but its flavor is not thin. It has depth, but does not leave heaviness alone. This balance lies at the heart of BORN the Earth's character.
BORN Kantsubaki: Tracing Its Character All the Way to the Finish
The defining qualities of BORN Kantsubaki are its ginjo aroma and the powerful finish that follows. Its character does not disappear after the opening aromatic impression; its presence continues through to the finish.
Among these six sakes, Kantsubaki draws attention to the passage of flavor over time. From the aroma at the outset to the strength that remains in the finish, viewing the beginning and end as one continuous expression reveals the firm core of this sake's character.
