BORN Gohyakumangoku Muroka Junmai Daiginjo is a Junmai Daiginjo brewed from 100% Gohyakumangoku rice — a variety grown in the brewery’s home region of Fukui prefecture — polished to 50%. The sake is cold-matured at −10°C for approximately one year as a fresh sake, then bottled unfiltered (muroka) and given a single pasteurisation before shipping. The absence of carbon filtration preserves the natural body and the characteristic profile of the Gohyakumangoku rice: clean, precise, with a well-defined structure.

Culinary affinity: The unfiltered structure gives this sake breadth across food styles — from sashimi and lightly seasoned Japanese dishes to preparations using butter, olive oil, or aged cheese.
