Polished to 20%, matured for five years
Yamada Nishiki from Hyogo’s Special A district is polished to 20%. After pressing, the sake is matured at about −10 °C for roughly five years, developing depth while retaining BORN’s clean profile.
Ripe fruit and honey, into a clear finish

Aromas of ripe melon, pear, pineapple and papaya are layered with floral and nutty nuances.
A honeyed, caramel-like roundness carries a gentle umami — rich and smooth in texture — before resolving to a crisp, clear finish.

Sabae, Fukui — since 1860
Kato Kichibee Shoten was established in Sabae, Fukui, in 1860. The brewery has produced junmai styles exclusively since 2003 and matures its sake below 0 °C before release. BORN’s identity is built around rice, water, time and a clean, layered house style.
