BORN Chogin is an ultra-premium Junmai Daiginjo crafted from 100% Yamada Nishiki rice sourced from Hyogo's Special A district, polished to a remarkable 20% remaining — meaning 80% of each grain is carefully milled away before brewing. After fermentation, each bottle is cold-matured at below −10°C for approximately five years, developing a richly layered bouquet and the brewery's signature hojun-umakuchi character: complex yet impeccably clean. This is an extremely limited release, available by reservation only.
Culinary affinity: Historically associated with the most delicate preparations — white-fleshed sashimi, scallops, sea urchin, and refined kaiseki cuisine.
