A satin-smooth Junmai Daiginjo built on Yamada Nishiki polished to 38% and blended from sake cold-matured below 0°C for one to two years. The profile leads with a grapefruit and citrus aroma, carries depth, roundness and a clean minerality, and finishes long and silky. Sweetness is restrained; the structure makes it versatile across serving temperatures.
