Colour
Dark and intense, the colour promises a dense wine.
Fragrance
The bouquet is refined, complex and pure with aromas of black fruits, violet, cinnamon and other sweet spices.
Taste
In the mouth, the flesh is pulpy and generous. Mineral notes with a saline touch bring elegance and length. The right dose of acidity produces freshness and tension. The fruit is present, rich and ripe. On the finish, this wine never leaves you.
Pairing
Duck gizzard salad, grilled red meat, light cheese like a fresh goat cheese not to hide the robe of wine. Japanese cuisine: lean Wagyu steak, lightly sweetened sukiyaki, beef shigureni and duck roast. Thai cuisine: mild Massaman beef curry, mu yang, braised beef and dishes with a rich demi-glace-style sauce.
Vinification
30% new barrels, 70% that contained at least one previous wine. Estate certified organic since 2006 and biodynamic since 2008 – member of Biodyvin.
