Notes of raspberry, blackcurrant, liquorice, violet.
Taste
The mouth is luscious with crisp tannins. Fresh and saline finish accompanied by aromas of liquorice and pepper.
Pairing
Classic pairings: fine cured meats, roasted poultry, grilled red meat, mushroom omelette, beef stew, fresh pasta and light cheeses. Japanese cuisine: yakitori with tare, duck rosu, sukiyaki, grilled mushrooms and lightly seared tuna. Thai cuisine: gai yang, moo ping, mild larb gai and massaman nua; keep chili moderate because Pinot-style tannin can become dry with strong heat.
Vinification
Manual harvesting & sorting. Indigenous yeasts. 10 months in French oak barrels & half-muids (600L).
