About Cuvée Lopy
Cuvée Lopy is the flagship red of Domaine Le Sang des Cailloux, a Vacqueyras estate on the Plateau des Garrigues. It takes its name from the farm where Serge Férigoule, the domaine's owner since 1990, was born, and is grown on the domaine's clayey garrigue plots, where iron-rich clay and rounded stones known as galets roulés retain daytime heat and channel roots deep into the soil.
The wine is made from old Grenache and Syrah vines aged between 55 and 65 years, fermented with indigenous yeasts in concrete vats, and aged separately by parcel in 450-litre tonneaux before bottling unfined and unfiltered.

Winemaking
Hand-harvested Grenache and Syrah are fully destemmed, then fermented with indigenous yeasts in concrete vats, with pump-overs at least once daily.
Product detail
The wine is aged separately by parcel in 450-litre tonneaux, then bottled unfined and unfiltered. As it is unfiltered, natural sediment remains, which decanting can separate from the clear wine.
Vacqueyras and the Plateau des Garrigues
Domaine Le Sang des Cailloux was founded in 1975. Serge Férigoule joined as vineyard manager in 1979 and took full ownership in 1990, the same year Vacqueyras was elevated to AOC Cru status. At the estate level, the domaine farms biodynamically across its holdings on the Plateau des Garrigues.
