Fine bubbles, grown inside the bottle
MIZUBASHO PURE is a sparkling sake that undergoes a second fermentation inside the bottle. To gather the resulting sediment at the neck, each bottle is riddled by hand — remuage — before disgorgement. Rather than injecting carbon dioxide, the method seals in the bubbles created by fermentation itself, up to 5.5 atmospheres of pressure.
Once finished, the sake rests near freezing to let the bubbles and sake integrate slowly. The entire method is patented. In 2009 it was adopted by El Bulli in Spain, an early demonstration of what sparkling sake could offer at the table.
How it tastes

Lychee, pear, muscat grape and white blossom shape the aroma. Beneath the fine bubbles sit a gentle rice umami and a faint sweetness. Citrus-like acidity draws the whole together, finishing clean and dry.
Keep refrigerated. Natural pressure may remain in the bottle, so it should be opened with care.

Nagai Sake Brewery was founded in 1886 in Kawaba Village, Gunma Prefecture. Its story begins with first-generation brewer Shoji Nagai, who came upon the local water and built the brewery around it. The company has protected the surrounding forest that feeds its brewing water ever since, carrying forward the soft, mountain-water character it draws from.
MIZUBASHO pursues aromatic lift and range at the table, while TANIGAWADAKE offers a cleaner, everyday drinking style built around daily cooking. Both labels grow from the same Kawaba Village water, shaped into two distinct roles.
