Dry precision, softened by soft water
Made with Gohyakumangoku and fermented through to an SMV of +8, this junmai draws its brewing water from underground flows off the Hotaka mountain range. Despite the super-dry billing, it doesn’t cut hard from the first taste — the softness typical of this water and the rice’s own umami both remain.
It opens with gentle fruit aroma and umami, with the dry edge emerging through the second half — a super-dry built to sit alongside food.
How it tastes

Muscat grape and young-vine aromas carry a green, meadow-like edge. The texture is surprisingly mellow, with rice umami spreading through the middle before a dry cut arrives at the end — a short, clean finish.
That dry precision carries through evenly, without hardening the texture.

Nagai Sake Brewery was founded in 1886 in Kawaba Village, Gunma Prefecture. Its story begins with first-generation brewer Shoji Nagai, who came upon the local water and built the brewery around it. The company has protected the surrounding forest that feeds its brewing water ever since, carrying forward the soft, mountain-water character it draws from.
MIZUBASHO pursues aromatic lift and range at the table, while TANIGAWADAKE offers a cleaner, everyday drinking style built around daily cooking. Both labels grow from the same Kawaba Village water, shaped into two distinct roles.
