WARIS-HUBERTBlanche Grand Cru Blanc de Blancs Extra-Brut Millésime 2017

Named by the owners of Waris-Hubert for their newborn daughter Blanche, this cuvée is built entirely from Chardonnay grown in Avize Grand Cru. After a long rest on its lees and a restrained dosage, it emerges less as an aperitif pour and more as a Champagne meant to hold its own at the table.

The Story of Blanche

Blanche takes its name from Blanche Waris, born in 2009, the eldest daughter of the family behind Waris-Hubert. The cuvée carries the estate's story into its next generation.

Made entirely from Chardonnay grown in Avize Grand Cru, the wine undergoes cold settling and a slow stainless-steel fermentation before extended lees aging in bottle. The result is an Extra-Brut with a taut sweetness and a notably weighty texture on the palate.

At the table

Built with the table in mind, this Champagne suits dishes with more weight and depth than a typical aperitif style.

The weighty mousse and restrained sweetness cut through rich sauces and aromatic dishes, framing their flavors rather than being overwhelmed by them.

Japanese

  • Miso-glazed grilled fish (saikyo-yaki style)
  • Creamy dashi-based hot pot
  • Tempura with a rich dipping sauce

Why it worksThe Chardonnay's structure and restrained sweetness balance the richness of miso and butter-forward flavors, lightening the overall dish.

Thai

  • Massaman curry
  • Green curry
  • Gapao (stir-fried basil dishes)

Why it worksThe Extra-Brut's taut mousse offers a refreshing contrast to the coconut-milk-based, herb-forward richness of these dishes.

Western

  • Cream-sauced poultry
  • Roasted meats with pan sauce
  • Mushroom risotto

Why it worksTrue to its table-Champagne character, the wine's acidity and body meet the weight of these rich sauces directly.

Winemaking

Fruit from Avize Grand Cru undergoes cold settling at 4°C for 72 hours, followed by a slow primary fermentation at 16°C in stainless steel. After 6–8 months of stainless-steel aging, the wine is bottled and rests on its lees for 22 months before a dosage of 3–4 g/L finishes it as Extra-Brut.
