Pairing

Classic pairings: oysters, caviar, tuna tartare, raw seafood, white fish, shellfish and lightly salted fried bites. Japanese cuisine: sushi, sashimi, tempura with salt, grilled white fish and chawanmushi; the low-dosage structure suits clean umami and iodine. Thai cuisine: steamed sea bass with lime, grilled prawns, yum talay with restrained chili and herb-led seafood dishes; avoid sweet sauces and very hot spice.

Vinification

Fermented in stainless steel vats. No malolactic fermentation; aged on lies in bottle 11o C for 3 years. No dosage.
