About Albescent
The name Albescent draws from the Latin albus, white — a reference the house uses for its flagship cuvée built around the clarity of chardonnay.
Each of the three Grand Cru villages contributes its own character to the blend: Avize brings mineral tension, Cramant adds body and breadth, and Oger lends elegance and delicate acidity.

Acacia and grape blossom lead into notes of barley sugar, toasted wheat and almond, framed by a crystalline clarity that lets the chardonnay speak clearly.
A delicate mousse carries the wine to a long, faintly mentholated finish that has become recognizable as the house's signature.
Pale straw yellow with green highlights, carrying a fine and persistent stream of bubbles.

At the table
The wine's chalky minerality, fine bubbles and toasted-almond depth open a wide range of pairing directions across Japanese, Thai and Western tables.
Each match plays on the tension between the wine's bright acidity and its creamy mousse, letting delicate seafood and aromatic spice find their own balance.
Japanese
- Shrimp tempura
- Sushi counter nigiri
- Chawanmushi steamed egg custard
Why it worksThe wine's fine mousse and mineral spine cut through the richness of tempura batter, while its toasted almond notes echo the delicate umami of nigiri and steamed custard.
Thai
- Steamed fish with lime and herbs
- Spicy seafood salad
- Thai fish cakes
Why it worksBright acidity balances the citrus and chili of steamed fish and spicy seafood, while the wine's creamy texture softens the heat rather than competing with it.
Western
- Fresh oysters
- Soft-ripened goat cheese
- Pan-seared scallops in butter sauce
Why it worksThe chalky minerality mirrors the brine of oysters, while the wine's creamy mousse and nutty depth find a natural match in goat cheese and buttery scallops.

Winemaking
Vinified mainly in stainless steel, with a portion fermented and aged in 600-litre oak barrels; malolactic fermentation is applied selectively by lot, and the wine rests on lees for around three years at a controlled 11°C before release.
