A Family Pét-Nat with a Sense of Humor

Domaine Amirault is run by Xavier and Agnès Amirault, the sixth generation to farm vines around Saint-Nicolas-de-Bourgueil in the Loire Valley, across 53 parcels of gravel, sand and limestone-clay soils.

Pet'Night channels the estate's low-intervention instincts into a bright, saline sparkling white with an informal, unforced character.

Made from 100% Chenin Blanc, fermented and bottled by méthode ancestrale with no dosage.Ferments with native yeasts only, then finishes its bubbles naturally inside the bottle.Unfiltered and unfined, bottled without added sulphites.Closed with a crown cap rather than a traditional cork and cage.Grown on the family's own vines, farmed organically (Ecocert, since 2011) and biodynamically (Demeter, since 2013).

Taste profile

In the glass

White orchard fruit and brioche notes built up during lees contact, with a touch of butter and wet chalk.

Ample and round on entry, with green apple and lemon freshness, a saline thread and a light spiced finish.

Pale gold in the glass, with a fine, persistent bead.

Before it reaches the glass

01

Temperature

Serve well chilled, around 8–10°C.

02

Timing

Best enjoyed young — ideally within its current 2026–2028 window, in keeping with its fresh, ancestral-method character.

03

Glassware

Pour into a wide tulip white wine glass rather than a flute, to let the brioche and orchard-fruit aromas open up.

At the table

Pet'Night's saline edge and fine bubbles give it an easy footing across Japanese, Thai and Western tables built on citrus, salt and gentle spice.

Its bright acidity, saline finish and fine bubbles suit dishes led by citrus and seafood, while the lees-driven brioche notes give it enough depth for preparations with butter or egg. Keep chili heat moderate so the wine's detail remains clear.

Japanese

  • Raw oysters
  • Sea urchin gunkan sushi
  • White fish sashimi with lime and olive oil

Why it worksThe wine's saline, chalky finish echoes the brine of raw seafood, while its citrus-toned acidity lifts delicate white fish.

Thai

  • Raw oysters with lime and chili (hoi nang rom)
  • Mild seafood salad (yam talay, light chili)
  • Green papaya salad with light chili (som tam)

Why it worksBright acidity and fine bubbles keep pace with lime and salt in Thai seafood dishes, provided chili heat stays moderate rather than fiery.

Western

  • French-style seafood platter with oysters and shrimp
  • Savory cheddar waffle with pickled red onion and poached egg
  • Simple lemon-butter grilled fish

Why it worksThe wine's own butter and brioche notes mirror richer, egg- and cheese-based dishes, while its fine bubbles and acidity cut through the fat.

Pairing guide — Wine

From cellar to bottle

Winemaking

Whole clusters of Chenin Blanc are pressed and begin a single fermentation in tank with native yeasts only; the still-fermenting wine is then bottled so it completes fermentation and builds its bubbles naturally inside the bottle, the traditional méthode ancestrale of the Loire.

Product detail

Unfiltered, unfined and bottled without added sulphites, it is released as a non-vintage Vin de France in a 750 ml bottle.
