White koji belongs to shochu, not sake. It produces citric acid, which is exactly why distillers in the south rely on it and brewers in the north traditionally did not. Aramasa put it into a sake in 2009 anyway, alongside the usual yellow koji, and the acidity that came out was distinctive within the category — grapefruit, kabosu, green apple, cut clean. Breweries across Japan have used white koji since; this is where it started. Akita Sake Komachi polished to 60%, kimoto, Association No. 6, cedar vats, undiluted at 12%.
Culinary affinity: Oysters on the half shell, seafood crudo, tempura and fried preparations, butter-based sauces, and other dishes suited to a crisp, high-acid style. Heavily chilli-forward dishes are worth testing in the kitchen first, as the acidity and the heat amplify each other.
