MITAKE

MITAKE is a Honkaku Imo Shochu from Mitake Shuzo on UNESCO World Heritage-designated Yakushima, Kagoshima. The spirit is defined by Yakushima’s ultra-soft water, sourced from cedar-forest rainfall and naturally filtered through granite, used for both mash and dilution. Made with Kagoshima’s Koganesengan sweet potato and white koji, and distilled by atmospheric distillation, Mitake presents a rare balance of rich sweet-potato texture and a surprisingly clear, clean finish. It is known in Japan as a “phantom shochu” for its limited access and restrained production footprint.

Culinary affinity: The clean, crisp profile and gentle potato sweetness pair well with grilled seafood, white fish, shellfish with light seasoning, chicken, Thai herb-heavy dishes, and desserts with citrus or restrained sweetness. It also performs well as a versatile base in classic to modern mixed drinks.
