Positive bitterness as a pairing tool
Developed for sushi with Shimizu Seizaburo Shoten and a sushi chef, this edition uses assemblage to tune a precise flavour rather than disclose a conventional rice-and-polish story. A citrus-peel-like bitterness lifts delicate fish, cuts richer oils and clears the way for the next piece.
How it tastes

Pale gold with fruit, citrus and white flowers. Clean acidity and subtle minerality carry an elegant body into a dry finish, where the designed bitterness remains fine rather than harsh.
