Positive bitterness as a pairing tool

Developed for sushi with Shimizu Seizaburo Shoten and a sushi chef, this edition uses assemblage to tune a precise flavour rather than disclose a conventional rice-and-polish story. A citrus-peel-like bitterness lifts delicate fish, cuts richer oils and clears the way for the next piece.
