Designed from the course outward
JAPAN CRAFT SAKE COMPANY and Senkin developed this sake for umami-rich dishes, from bright starters and savoury plates to the finish of the meal. Miso kōji brings depth, while a fine persistent sparkle balances richness, sauce and smoke.
How it tastes
Steamed rice, banana and white peach lead into a rounded, full-bodied centre. Fresh gas, Senkin-like acidity and a gentle citrus bitterness tighten the finish.
Some natural pressure may remain in the bottle, so it should be opened with care.
