AKABU Junmai is brewed by Akabu Shuzo (est. 1896, Iwate prefecture), a brewery that was entirely destroyed in the 2011 Great East Japan Earthquake and rebuilt from the ground up in Morioka in 2013. In 2014, sixth-generation brewer-owner Ryunosuke Furutate — then 21 years old — launched the AKABU brand with a simple principle: create a new history for Iwate. Crafted from Iwate-grown rice polished to 60%, using Iwate-origin yeast and local soft water, this is a sake rooted entirely in its home region. The profile is clean and fruit-forward — white peach and citrus — with a silky texture and a crisp finish.
