AKABU Junmai, the Visionary Masterpiece of a 22-Year-Old Toji

March 11, 2011. Akabu Shuzo, a historic brewery in Otsuchi, Kamihei District, Iwate Prefecture, lost everything to the devastating tsunami of the Great East Japan Earthquake. In an instant, the brewery, its cherished tools, and the very soil where sake had been crafted for 115 years since its founding in 1896 were reclaimed by the sea. Yet, the spirit of craftsmanship endured. In 2013, Akabu Shuzo resurrected its legacy by building a state-of-the-art brewery in Morioka, signaling a triumphant return to production. From these new walls emerged a visionary brand in 2014: AKABU. At the helm was Ryunosuke Furudate, the sixth-generation owner-brewer and toji (master brewer), who was a mere 22 years old at the time. The passionate young brewing artisans gathered around him, united by a singular, powerful vision: “To forge a new history from Iwate.”

An Ode to Iwate — The Quintessence of Local Terroir

At the heart of AKABU Junmai lies a profound philosophy: every element must be deeply rooted in the soil of Iwate. It is an uncompromising devotion to an all-Iwate terroir. The foundation begins with Iwate’s pristine soft water, seamlessly blended with indigenous sake-brewing rice—cultivated specifically for the region’s unique climate and meticulously milled to 60 percent. The yeast, too, is exclusively local. Distinctive regional strains bearing poetic names like Yuko no Omoi and Giovanni no Shirabe bestow this exquisite sake with its signature fruity bouquet. In the realm of premium sake, renowned rice varieties like Hyogo’s Yamada Nishiki are universally revered as the gold standard. Defying this conventional wisdom, AKABU forged its own audacious path: competing solely with Iwate rice, Iwate yeast, and Iwate water. By uniting these three fundamental life forces of sake within a singular locale, the brewery curates a completely unique character that no other producer can emulate.

Beyond the Metrics — A Pure Sensory Experience

AKABU deliberately eschews the public disclosure of detailed technical specifications, such as the sake meter value or acidity. This is not an omission, but a profound choice born from Furudate’s purist philosophy. Rather than allowing connoisseurs to form preconceptions based on mere numbers, he invites them to experience the sake with a completely open palate, absorbing its true essence intimately and directly. This devotion to the pure sensory experience is mirrored in the bottle’s aesthetic. Departing from traditional brush calligraphy, the label boasts a strikingly modern, highly recognizable design that juxtaposes the romanized “AKABU” with a stylized illustration of a samurai adorned in a crimson helmet. It is intuitively designed to exude both exclusivity and modern elegance, captivating both aficionados and newcomers alike.

Storage and Transport: Product and Stage Matter

Storage and transport conditions need to be assessed by product and logistics stage. A single temperature does not describe every part of the journey from Japan to Thailand. Conditions for a particular shipment should be established from product-specific handling instructions and the relevant transport and warehouse records. Crowning Glory Among 286 Labels — Gold Laurels at SAKE COMPETITION 2025

In 2025, AKABU Junmai achieved extraordinary acclaim, securing a coveted Gold Prize and placing fifth in the fiercely competitive Junmai category at the prestigious SAKE COMPETITION. It emerged as a crowning jewel among an astounding 286 elite entries. What renders this triumph truly spectacular is that this standard Junmai eclipsed even Akabu Shuzo’s ultra-premium portfolio, including their Junmai Daiginjo and Junmai Ginjo expressions. For a junmai milled to 60 percent to claim the fifth position nationwide—not as a highly-priced flagship, but as an accessible masterpiece—is a profound testament to the brewery’s foundational mastery. It implies that their highest technical prowess is beautifully concentrated into this singular, elegant offering. The resilient brewery that once lost everything to the sea boldly declared they would “forge a new history from zero.” More than a decade later, those are no longer merely words of promise.
