CHIEBIJIN Junmai
Gentle fruit, rounded umami and a clean, crisp finish.

A food-oriented junmai from Kitsuki
CHIEBIJIN Junmai is brewed by Nakano Shuzo in Kitsuki, Oita. The BG product summary records Hinohikari and Yamada Nishiki, with koji rice polished to 65% and kake rice to 70%. Its profile is designed around balance at the table.
How it tastes

Rich sweetness and aroma arrive first, followed by a gradual increase in savoury weight. The centre remains soft and rounded, while the finish becomes crisp and food-ready.
The aroma’s initial lift gradually gives way to a smoother, rounder texture.
Kitsuki, Oita, since 1874
Nakano Shuzo was established in Kitsuki in 1874. The name Chiebijin honours Chie, the first proprietress. Brewing begins with water drawn from 200 metres underground in the Kunisaki Peninsula, while the flagship junmai uses Hinohikari rice grown in Kitsuki.
