BORN Junsui — whose name means “pure” in Japanese — is a Junmai Daiginjo brewed from 100% Yamada Nishiki rice sourced from Hyogo's Special A district, polished to 50%. Uniquely designed for its 300ml format, this sake is cold-matured at −5°C for twelve months as a nama-chozo (fresh-stored) sake before a single pasteurisation at bottling. The result is a refined, clean profile with a fresh floral and fruit aroma and a smooth, crisp finish.
Culinary affinity: Naturally associated with delicate appetisers, steamed prawns, white fish carpaccio, and lightly dressed salads. Less suited to heavily spiced preparations.
