A winter-only, freshly pressed nigori nama genshu
Unlike BORN’s matured core range, First Snow is a winter-only release that bottles the newly pressed sake as a lightly cloudy, active nama genshu.
Because it is neither pasteurised nor diluted with water, the rice’s umami, a fresh, vivid mouthfeel and a fine natural effervescence all come through. The Yamada Nishiki version blends components polished to 35% and 50%.
A fresh aroma, rice umami and a fine effervescence

First Snow shows a different side of its character whether chilled, on the rocks, or gently warmed. A fresh, vivid aroma typical of a freshly pressed sake carries rice umami and a gentle sweetness.
The smooth texture from its natural cloudiness, joined by a fine effervescence, gives it a light, refreshing character. Some natural pressure may remain in the bottle, so it should be opened with care.
Sabae, Fukui — since 1860
Kato Kichibee Shoten was established in Sabae, Fukui, in 1860. The brewery has produced junmai styles exclusively since 2003 and matures its sake below 0 °C before release. BORN’s identity is built around rice, water, time and a clean, layered house style.
