Rikuu 132 was Japan's first cross-bred rice, released in the 1920s and pushed into the northern fields by the poet Kenji Miyazawa because it could survive the cold. Aramasa grows it without pesticides at Uyashinai, in the hills outside Akita City, and the brewery is blunt about what it wants from it: not a well-behaved rice, but the rough character it inherited. Polished to 50%, fermented by kimoto with Association No. 6 in cedar vats, bottled undiluted at 13%. Green apple, pear and muscat sit over a firmer frame than the other Colors, and the finish carries a faint resinous grip from the cedar.

Culinary affinity: Salted and cured fish, grilled shellfish, ricotta and goat cheese, light smoke, roasted root vegetables — dishes with enough structure to meet its own.
