How it is made

Keeping both the aroma and texture of the fruit

The ingredients are blended at low temperature, with yuzu juice, pulp and natural citrus oil intentionally left in the liqueur. Sake softens the sharper edges of the fruit’s acidity and bitterness.

01

Low-temperature blending

Gentle handling preserves the vivid citrus aroma that can easily fade with heat.

02

Pulp left in the bottle

Fine fruit solids and oil give the liqueur a tangible fruit texture as well as aroma.

The result

A rounded balance of acidity, peel and fruit

The sake-and-spirit base supports the yuzu clearly, giving the lower-alcohol liqueur a layered, complete shape.

Taste profile

Fresh yuzu aroma, juicy acidity and soft peel bitterness

Fresh yuzu aroma, juicy acidity and soft peel bitterness

A clear Japanese-yuzu fragrance rises first, followed by lively acidity. The peel note remains gentle, while the fine pulp gives the finish a softly lingering texture.

Food affinities

Four directions shaped by yuzu aroma and gentle bitterness

These pairings are not official combinations announced by the producer, but a reading of the aroma and flavor characteristics recorded on the product page. Yuzu’s clear fragrance, lively acidity, gentle peel bitterness, and a long finish from its fine pulp form the basis for four directions.

A clear fragrance sharpening rich seafoodFresh sea urchin, mixed seafood salad (yum talay), salt-grilled yellowtail (kanburi). Yuzu’s clear fragrance sharpens the aroma of richer fish.
Gentle bitterness lightening fried foodFritto misto, shrimp cake (tod mun kung), tempura with yuzu salt. The gentle, peel-like bitterness lightens the oil in fried batter.
A soft pulp texture echoing aged aromaDry-aged beef, duck larb, aged duck breast. The long finish from the soft pulp echoes the aroma of aging.
Yuzu’s fragrance meeting a light after-meal dessertLayered coconut jelly (tako), citrus granita, yuzu jelly. The clear yuzu fragrance continues into a light after-meal dessert.

The aroma molecules that make up citrus fragrance are known to overlap closely with fat-derived aromas in seafood, giving a theoretical basis for pairing with richer ingredients. Aragoshi Yuzu’s clear fragrance and gentle bitterness follow this same logic.
