A signature expression built around Tsurunashi Genji, an old sweet-potato variety revived from a small number of seedlings. Black sweet-potato koji, a short rest for the raw potatoes and atmospheric distillation hold fragrance and body in one 26% expression.
A variety brought back into cultivation
Tsurunashi Genji was revived by the house from a small number of seedlings after it had become difficult to find. Before mashing, the sweet potatoes are rested for about two weeks. This step is part of the product’s aromatic design, drawing greater potential from the material before fermentation begins.
Fragrance with an atmospheric-distilled core
Released in 2012 as the distiller’s signature expression, YASUDA combines black sweet-potato koji, i-33 yeast and atmospheric distillation. Lychee, muscat and rose-like notes sit above a richer central structure.
