A signature expression built around Tsurunashi Genji, an old sweet-potato variety revived from a small number of seedlings. Black sweet-potato koji, a short rest for the raw potatoes and atmospheric distillation hold fragrance and body in one 26% expression.

The raw material

A variety brought back into cultivation

Tsurunashi Genji was revived by the house from a small number of seedlings after it had become difficult to find. Before mashing, the sweet potatoes are rested for about two weeks. This step is part of the product’s aromatic design, drawing greater potential from the material before fermentation begins.

The signature

Fragrance with an atmospheric-distilled core

Released in 2012 as the distiller’s signature expression, YASUDA combines black sweet-potato koji, i-33 yeast and atmospheric distillation. Lychee, muscat and rose-like notes sit above a richer central structure.

Food affinities

Where lychee, muscat and rose lead, four directions

YASUDA combines black sweet-potato koji, i-33 yeast and atmospheric distillation, balancing a botanical direction recalling lychee, muscat and rose with a rich body. The pairings below are not an official combination from the producer; they are a reading drawn from these recorded aromatic and textural characteristics.

Fresh fruitProsciutto e melone, yum taeng mo and citrus-marinated salmon. The fresh-fruit direction recalling lychee and muscat sits alongside light dishes built around fruit.
A floral finishGreen salad with edible flowers, yum dok sano and spring-vegetable tempura. A floral finish recalling rose sits alongside light dishes built around flowers and spring vegetables.
A rich bodyRoast pork belly, kaeng hang le and teriyaki yellowtail. A rich body sits alongside dishes with a similarly full, well-marbled character.
A refined structureConsommé, tom yum nam sai and a clear white-fish soup. The careful step of resting the raw material before mashing sits alongside clear, refined soups.

Food Pairing (ingredient data) groups rose-like aromas with the lychee, apple and raspberry family. YASUDA’s aromatic direction, recalling lychee, muscat and rose, points toward dishes drawn from the same fruit-and-flower family, an aromatic match.
