The sake

White, the KAGURA flagship

White is made entirely from Kyoto-grown Iwai rice, polished to 35%. It is unfiltered and undiluted, then pasteurised once and stored at ice temperature. The result joins an aromatic profile with the quiet weight of genshu.

How it tastes

Sensory profile

Mango, apricot, white grape and muscat are layered with a soft lactic note. A smooth, concentrated mouthfeel balances sweetness, acidity, bitterness and a subtle earthy edge, finishing long and fine.

The brewery

Kyoto, a brewery restored in its historic centre

Matsui Shuzo was founded in 1726. Brewing resumed in central Kyoto in 2009, using water from the Senshin-i well. KAGURA brings together Kyoto-grown Iwai rice, small-scale brewing and a clear, rice-led style.
