The sake

A lighter-alcohol unfiltered Junmai

Clear is made with Kyoto-grown Iwai, Kyoto yeast Kyo-no-Koi and water from the Senshin-i well. It is unfiltered, undiluted and unpasteurised, with four-stage brewing and long cool fermentation shaping a 13% profile.

Sensory profile

A soft aroma leads into rounded rice sweetness and concentrated umami. The texture is gentle and light, while the undiluted Junmai structure keeps the flavour from becoming simple.

The brewery

Kyoto, a brewery restored in its historic centre

Matsui Shuzo was founded in 1726. Brewing resumed in central Kyoto in 2009, using water from the Senshin-i well. KAGURA brings together Kyoto-grown Iwai rice, small-scale brewing and a clear, rice-led style.
