DAIYAME 25 is a honkaku imo shochu from Hamada Shuzo in Ichikikushikino, Kagoshima, created at Denzoin-gura as the brewery's innovation-led expression for its 150th anniversary era. It is made with Kagoshima sweet potato matured by Hamada Shuzo's proprietary koujuku-imo method, black koji, and low-temperature vacuum distillation, producing a distinctive aroma profile of fresh lychee, muscat, elderflower, and clean sweet-potato depth.
Culinary affinity: The bright fruit aroma, clean texture, and black-koji structure complement seafood, light pork dishes, herb-led Thai preparations, Chinese cuisine, Italian dishes with tomato or herbs, and desserts with fruit or gentle dairy notes.
