The sake

A deliberate counterpoint to freshness

Enishi is brewed with Association No. 9 yeast and matured at room temperature for at least three years. Slow change brings a golden tone and a mature savoury profile unlike GIKYO’s cold-aged prestige labels.

Through this maturation the sake deepens from gold toward a pale amber, taking on dashi-like umami and nuances of nut and caramel. The name Enishi means the bonds that connect people and things — a nod to the connections that time itself creates.

Roasted nuts, caramel, dried fig and dashi-like savouriness fill a rounded mouthfeel; gentle acidity gives it structure, ending with dry spice and a long umami trail.

The brewery

Aisai, Aichi — rice first, time included

The name Gikyo was given by the brewery’s longtime sake merchant, in praise of Yamachu Honke Shuzo’s conduct during the Meiji era: when raw rice prices spiked, the brewery held to its contracted price with growers rather than pass the increase on. That commitment to honoring an agreement became the sake’s name.

Yamachu Honke Shuzo works with Yamada Nishiki from the Special-A district of Tojo, Hyogo, producing an all-junmai range with its own in-house rice polishing. GIKYO is built around rice umami rather than showy aroma, with careful pressing, maturation and blending used differently across the range.
