The sake

Omachi’s depth, shaped by a 50% polish

SHICHIDA Junmai-Ginjo Omachi is made with 100% Okayama-grown Omachi rice, polished to 50%. ABV is 16%. The rice’s full-bodied flavour is balanced by acidity and a crisp finish.

The regular, year-round release is finished with a single pasteurisation and no activated-charcoal filtration. Rather than chasing aroma alone, it is designed so that Omachi’s depth meets its food pairing.

Sensory profile

A ripe fruit aroma of melon and pineapple, with a cool impression of mint and green bamboo. Omachi’s umami spreads richly, with acidity giving it shape. The finish is generous, yet the aftertaste stays dry and clean.

The brewery

SHICHIDA / TENZAN · Tenzan Sake Brewery · Saga

Tenzan Sake Brewery is based in Ogi City, Saga Prefecture. Building on a water-wheel business begun in 1861, the brewery turned to sake production in 1875. Drawing on groundwater from the Gion River system, it has brewed sake that gives the rice’s umami a firm core.

SHICHIDA is a brand launched in 2001 by Kensuke Shichida, the brewery’s sixth-generation owner. It pursues a balance of aroma, umami and finish suited to the modern table, while making the most of the differences between rice varieties.

What is the President’s Prize?
Kura Master’s President’s Prize is the top distinction selected from all sake entered in that year’s competition. In 2017, 32 French sommeliers and other food-and-beverage professionals blind-tasted 550 entries. SHICHIDA Junmai-Ginjo Omachi 50 was chosen from the top five in each category—a final field of ten.
