SHICHIDA Junmai is the standard Junmai expression of Tenzan Sake Brewery in Ogi, Saga, founded as a sake brewery in 1875. Created under the limited-distribution Shichida brand launched by sixth-generation president Kensuke Shichida in 2001, it is brewed with Yamada Nishiki for koji rice and Reihou for kake rice, polished to 65%, and shaped by the medium-hard underground water of the Tenzan mountain system. Its structure emphasizes rice umami, firm acidity, and a clean food-oriented finish rather than a highly aromatic style.

Culinary affinity: The rice umami, firm acidity, and mineral structure complement dashi-based dishes, grilled fish, fried textures, tomato or citrus accents, and Thai preparations with moderate herbs or spice.
