Aromatic architecture

A confectioner's memory, rebuilt as gin.

Juniper and coriander remain central. Local strawberry adds fruit, peppermint brings lift, cacao and warm spice add depth, and a small addition of the house's Pure Folie liqueur links the recipe to Combier's confectionery roots.

Distillation and composition

Historic copper stills keep fruit and spice inside a gin frame.

01

Small-batch distillation

Historic copper pot stills shape the juniper-led spirit.

02

Fruit and aromatic layers

Strawberry, mint, cacao and spice are layered without losing the gin core.

03

House signature

A small amount of Pure Folie liqueur connects the gin to the distillery's strawberry expression.

Inside the glass

Strawberry and floral spice, fresh rather than liqueur-sweet.

PURE FOLIE Gin sensory profile

Juniper remains present on the nose beneath delicate pink fruit. The palate is smooth and rounded, with fresh strawberry, peppermint, cacao and spice building towards a lively fruit-spice finish.

How to serve

A clear signature serve, with enough structure for cocktails.

Official G&T

Four centilitres of gin, ten of tonic, finished with small strawberries.

Spritz

Sparkling wine extends the fruit while keeping the spice visible.

Chocolate dessert

Cacao and peppermint bridge naturally into dark chocolate.

Food affinities

Strawberry and spice, meeting points for food

The food affinities for PURE FOLIE Gin are not combinations officially presented by the distillery, but a reading drawn from the characteristics recorded on this page. Built around the fruit character of local Loire strawberry, the freshness of peppermint, the depth of cacao and warm spice, and the juniper-coriander structure beneath them, they are organised into four directions.

Strawberry aroma meeting fruit-forward dishesStrawberry and rocket salad, yam polamai (Thai spicy fruit salad), fresh berry and burrata salad. The fruit character of the local strawberry overlaps with the aroma of other acid-forward fruit.
Peppermint freshness alongside herb-driven dishesChilled tofu with fresh garden herbs, yam samun phrai (Thai herb salad), lamb chop with fresh mint. Peppermint’s cooling freshness sits alongside the freshness of dishes built on fresh herbs.
Cacao and warm spice matching dishes with depthPork belly braised in hatcho miso, massaman curry, spiced pear tart. The depth of cacao and warm spice runs in the same direction as dishes carrying similar warm aromatics.
Juniper-coriander structure standing up to richnessDuck breast with sansho pepper, tom yum goong, roast chicken with a coriander-seed crust. The juniper-coriander structure holds its shape against richer, fattier dishes.

These suggestions are a hypothesis built on structural cues drawn from food-pairing theory — shared aroma compounds creating synergy, acidity or spice holding back richness, and matching the weight of drink and dish — and are not an official recommendation from the distillery.
