KOTSUZUMI BAIJUN is a Japanese cloudy umeshu-style liqueur from Nishiyama Shuzo (KOTSUZUMI) in Hyogo. It features a rich, plush body created by micro-cut ripe Nankoume plum puree suspended in the liquid rather than fully filtered out, giving it a distinctive cloudy appearance and naturally layered sweetness. At 10% ABV, it works best as a sipping-style aperitif, and also for mixing where viscosity and aromatic depth can be showcased.

Culinary affinity: Its velvety plum depth pairs well with rich poultry dishes, lightly sweetened sauces, roasted nuts, and nut-forward desserts. It also supports modern Japanese and Thai pairings where plum notes can bridge savory and sweet elements, including grilled fish, lightly spicy soups, and caramelized fruit desserts.
