Es Inc. was founded in Daisen, Akita, in 2020 by Shuhei Akimoto. Drawing on the region's fermentation culture, the company developed KOJI CLEAR as a new use for koji: contemporary in appearance, simple in ingredients and designed for settings beyond the traditional amazake occasion.
