Built around Sake Mirai
Black is made with Sake Mirai, a rice developed by Takagi Sake Brewery. The sake was released as the brewery’s first official international expression in 2017, with one pasteurisation and bottle maturation at −8°C.
How it tastes

La France pear, Fuji apple, honeydew and quince are layered with young banana, white flowers and a fresh lactic note. The mouthfeel is soft and light to medium in weight, with gentle acidity and a clean, dry-leaning finish.
The gentle acidity stays bright, carrying the clean, dry-leaning finish through to the end.

Founded in Murayama, Yamagata in 1615, Takagi Sake Brewery brings more than four centuries of craft and sensibility to every expression of JUYONDAI.
Here, three sake expressions and Ranbiki-Shu, a separately classified rice spirit, are presented as one JUYONDAI collection. Together, these four bottles reveal a poised, layered world made to accompany the rhythms of the table.
