Cuvée 72 begins with the same blend as Première Cuvée: Pinot Noir 45%, Chardonnay 33% and Meunier 22%, with up to half perpetual reserve wine.

Its name states the recipe—at least 36 months on lees and another 36 months after disgorgement. This second period deepens floral, spice, toast and nut tones without losing saline freshness.

Taste profile

In the glass

Lemon zest, grapefruit and white flowers develop into saffron, cedar, nutmeg, maple and toasted hazelnut.

Creamy orchard and dark fruit meet honey, dried fruit and a chalky, saline finish that remains pure and generous.

Bright gold with a continuous stream of fine bubbles.

Enjoy at 10–12°C; serving too cold hides its post-disgorgement development.

Timing

A useful guide is the disgorgement date plus eight to ten years, depending on whether fresher or more mature aromas are preferred.

Use a tulip-shaped white-wine glass. Decanting is unnecessary; allow the wine to open in the glass.

Winemaking

First-press juice; 20% fermented in oak and 80% in stainless steel. Perpetual reserve wine begun in 1985 forms roughly one-third of the blend on average.
