DOMAINE PATRICK BAUDOUIN Le Cornillard 2020

On a steep, south-east-facing slope above the Layon, vines planted between the 1940s and 1960s grow directly from Precambrian schist. When Patrick Baudouin took over the family estate in 1990, much of its vineyard had been neglected; he has since developed Le Cornillard into one of the domaine's most complete expressions of dry Chenin Blanc grown on schist.

DOMAINE GAUBY Muntada 2018

Deep in the Roussillon backcountry, on the sharp limestone-and-marl slopes of Calce, Muntada is the wine through which Gérard Gauby chose to step outside the boundaries of the AOC, releasing it instead under IGP designation as a way of pursuing his own idea of what the land could say. Grapes ripen slowly under the constant push of the Tramontane wind, and everything that follows in the cellar aims simply not to get in the way of what the site already has to say.

In Bouzeron, a village the wine world knows for Aligoté, Domaine de Villaine set aside selected south-facing parcels for Chardonnay — plots the village elders once spoke of with quiet affection, simply as 'Les Clous Aimé.' Aubert de Villaine kept that name on the label as a nod to the people who tended this ground long before him.

DOMAINE DECELLE & FILS Chorey-lès-Beaune Les Champs Piétants Blanc 2022

In an appellation known almost entirely for its reds, a parcel of Chardonnay grows high on a stony slope scattered with hand-piled stones, its roots searching between the rocks for a tension not typically found on flatter ground nearby.

DOMAINE LE SANG DES CAILLOUX Cuvée Lopy 2021

Named after the farm where Serge Férigoule, who took full ownership of the domaine in 1990, was born, Cuvée Lopy is the estate's flagship red, grown on old vines rooted in iron-rich clay and rounded stones (galets roulés) on the Plateau des Garrigues — a wine shaped as much by memory as by soil.
