About the Wine
Domaine Gruhier is based at the Abbaye du Petit Quincy, a historic building in the village of Épineuil in northern Burgundy. Dominique Gruhier took over the vineyard in 1990 and has since deepened a commitment to natural, low-intervention winemaking.
Bourgogne Tonnerre is a dry white wine grown on the same Kimmeridgian limestone as Chablis. Spontaneous fermentation with native yeasts and aging split between stainless steel and used oak barrels preserve the purity of the fruit while adding gentle complexity.

Comparative profile within the Bacchus Global wine range.
Vivid notes of exotic fruit salad, pineapple with a touch of citrus, yellow apple, ripe pear and quince, opening later to cuckoo-flower blossom, soft vanilla, light wood and a hint of white chocolate.
Rich and generous, with a supple, creamy texture balanced by lively acidity; oak-derived roundness meets sharp Kimmeridgian minerality and a saline, elegant, lingering finish.
Pale, bright straw-yellow with medium viscosity.

At the table
The wine's mineral drive and creamy texture create natural bridges across cuisines.
Its saline acidity and supple palate favor dishes built around shellfish, richer white meats and creamy sauces, while its restrained oak keeps it food-friendly rather than assertive.
Japanese
- Raw oysters
- White fish sashimi
- Chicken tempura
Why it worksThe wine's saline minerality echoes the brine of raw oysters, its creamy texture suits delicate white fish sashimi, and its balanced fruit carries through the light richness of chicken tempura.
Thai
- Fresh oysters with lime
- Thai steamed fish in garlic-butter sauce
- Herb-fried chicken
Why it worksBright acidity cuts through the buttery richness of Thai seafood preparations, while the wine's fruit depth stands up to the aromatic herbs used in Thai poultry dishes.
Western
- Poached sole in butter sauce
- Creamy pasta with white sauce
- Young Brie cheese
Why it worksThe wine's oak-rounded texture mirrors buttery and cream-based preparations, and its acidity keeps richer dishes and soft cheese in balance.
From cellar to bottle
Winemaking
Chardonnay is pressed slowly and settled in tank for 12 to 24 hours without additives before spontaneous fermentation begins with native yeasts; the wine then ages for ten months split between stainless steel (70%) and used oak barrels (30%).
Product detail
After blending, the wine rests a further six months in stainless steel. Vines average around 40 years old, the wine falls under the AOC Bourgogne Tonnerre appellation established in 2006, and total SO2 at bottling is kept to a low 35–45 ppm.
Origin & Terroir
The domaine is based at the Abbaye du Petit Quincy, a former Cistercian monastery founded in 1212 that has anchored winegrowing in the area for centuries.
