When 50% Rice Polishing Is Not Junmai Daiginjo

Understanding the eight sake designations through ingredients, rice polishing and production methods.

Two bottles of sake may both share a rice polishing ratio of 50%, yet one carries the label “Junmai Daiginjo” while the other reads “Junmai Ginjo.” What lies behind this distinction?

Japan’s National Tax Agency sets standards for sake known as tokutei meishoshu, or special designation sake. The system defines eight classifications based on ingredients, production methods and other requirements. A sake’s designation is not determined by a single number. To understand the story on the label, the ingredients and the rice polishing ratio are useful starting points.

The Foundations of Junmai

Sake designated as “Junmai” is brewed from rice, rice koji and water, without added brewing alcohol. Rice koji refers to steamed rice cultured with koji mold. Enzymes produced by the mold convert rice starch into sugars.

Brewing alcohol is obtained by distilling a liquid fermented from grains or other suitable raw materials. Distillation involves heating a liquid, then cooling and collecting the resulting vapor. In sake production, brewing alcohol can help adjust aroma and flavor. Its presence alone is not a marker of lesser quality.

Brewers are not required to display a special designation simply because a sake meets its criteria. The absence of the word “Junmai” does not automatically signify added alcohol. The raw materials used are identified in the ingredient list.

Deciphering the Eight Classifications

The rice polishing ratio, or seimai-buai, is the weight of the white rice remaining after milling, expressed as a percentage of the original brown rice weight. When 100 kilograms of brown rice is milled to leave 60 kilograms of white rice, the polishing ratio is 60%. The number reflects what remains, not what was removed.

The eight designations can be mapped through their ingredients and rice polishing requirements:

Junmai once required a rice polishing ratio of 70% or less. That requirement was removed in 2004, leaving no upper limit for the category today.

However, the table alone does not determine a designation. Every category also has requirements concerning the proportion of rice used for koji, aroma, flavor and appearance. Ginjo and Daiginjo sake, including their Junmai counterparts, also require ginjo-zukuri, a brewing approach intended to develop distinctive aroma and flavor.

A rice polishing ratio of 50% also meets the “60% or less” requirement. If the other conditions are satisfied, the sake can therefore be labeled Junmai Ginjo. Brewers choose a designation within the requirements their sake meets. Milling rice to half its original weight does not automatically make the result Junmai Daiginjo.

The Craft Behind “Tokubetsu”

Tokubetsu Junmai and Tokubetsu Honjozo require a rice polishing ratio of 60% or less, or a special production method, together with particularly good aroma, flavor and appearance. When the designation relies on a special production method, an explanation of that method must be displayed.

Tokubetsu means “special,” but it does not rank a sake above every other style. It is a term tied to rice polishing or production methods. Even within the same classification, aroma and flavor vary with the rice, yeast and fermentation process.

Further Clues: “Nama” and Sake Meter Value

Other label terms describe different aspects of production. Nama-zake refers to sake that has not undergone any heat treatment after seisei, the stage when sake is obtained by straining the fermented mash. Nama-chozo, by comparison, is stored without heat treatment and then heated before shipment. The shared word “nama” does not make them identical, and storage instructions also matter.

The Sake Meter Value, or nihonshudo, is based on specific gravity, comparing the weight of equal volumes of sake and water. It does not measure sugar content directly. Although it can serve as a rough guide to sweetness or dryness, acidity, an indicator of the amount of acid, also affects how flavor is perceived.

The eight designations describe ingredients and production methods. Nama-zake and Nama-chozo indicate whether and when heat treatment occurs. Sake Meter Value offers a clue to specific gravity, which changes with the liquid’s composition. Once their roles are separated, a long label becomes a collection of short explanations. It is more than a hierarchy of quality: it tells us how the sake was made.
