Kame-no-O is the ancestor rice — bred by a single farmer in Yamagata in the Meiji era, and standing somewhere in the family tree of most of the rice Japan eats today. Aramasa polishes it to 40%, further than anything else in the Colors range, and then says plainly that polishing too hard would smother what makes the rice worth using. That tension is the point. The brewery describes Kame-no-O as a rice that mirrors whoever brews it, and calls Ash the clearest statement of how it thinks. Fermented by kimoto with Association No. 6 in cedar vats, undiluted at 12% — the lowest in the range. Clear and finely drawn, with an edge of bitterness holding the shape and a slow opening that develops further with age.
Culinary affinity: White fish sashimi and kombu-cured fish, sushi with salt and citrus, scallop and prawn, clear poultry broths.
