Domaine Decelle & Fils — 2022
DOMAINE DECELLE & FILSSavigny-lès-Beaune Les Gollardes Rouge
On a south-facing slope where a cold air funnel from a nearby combe keeps the fruit cool, Savigny-lès-Beaune's Les Gollardes ripens later than its aspect would suggest — a quirk that gave the warm, generous 2022 vintage a quiet, distinctive restraint.

About the Wine
Domaine Decelle & Fils is based in Nuits-Saint-Georges, Burgundy. Formerly known as Decelle-Villa, the estate took its current name in 2020, after co-founder Pierre-Jean Villa stepped away to focus on projects in the Northern Rhône; it is now run by Olivier Decelle and his family.
This 2022 release comes from Les Gollardes, a village-level lieu-dit in Savigny-lès-Beaune, made from two parcels the estate acquired in 2010. It is also the first vintage overseen by newly arrived winemaker Thomas Emin.

Timing
Within the 2025–2030+ window; a short 20–30 minute aeration suits the wine in its earlier years.
Glassware
A wide Burgundy bowl (600–700 ml), such as Riedel Veritas Pinot Noir or Zalto Burgundy, gives the mushroom and undergrowth notes room to unfold.
At the table
Three lenses on the table — Japanese, Thai and Western — show how the wine's structure and site character carry into different cuisines.
The fine, cool-site tannins and fresh fruit here suit umami-driven dishes as comfortably as the classic slow-cooked beef and poultry preparations of Burgundy itself.
Japanese
- Mild sukiyaki
- Wagyu tataki
- Aigamo (duck) roast served as part of a hassun course
Why it worksUmami-forward, dashi-based dishes with moderate fat let the wine's fine, cool-site tannins show through without being overshadowed.
Thai
- Mushroom-forward Thai dishes
- Lacquered smoked pork
- Mild Massaman beef curry
Why it worksGentle spice and mushroom-driven flavours sit comfortably with the wine's fine tannins, while heavy chilli or very sweet glazes are better avoided.
Western
- Boeuf bourguignon
- Coq au vin
- Cèpe mushroom risotto
Why it worksClassic Burgundian pairings mirror the wine's own fruit and undergrowth character, with slow-cooked beef, poultry and mushroom notes echoing what's in the glass.

Winemaking
Grapes are hand-picked into 15kg crates and sorted before roughly 20% whole clusters go into traditional open wooden vats for fermentation with indigenous yeast. After about three weeks of maceration, the wine is gravity-filled into 228-litre Burgundy pieces (20% new oak) for 18 months of ageing.
Product detail
Bottled under natural cork at 750 ml, the wine is classified as a village-level lieu-dit within Savigny-lès-Beaune, and 2022 marks the first vintage overseen by winemaker Thomas Emin.
Origin & Vineyard
Although the slope faces south, cold air draining down from a nearby combe keeps the site notably cool — a combination said to give the Pinot Noir here both colour and body alongside freshness.
