The design

A stable tunnel cellar gives the blend its calm outline.

The current expression, introduced in September 2023, uses the producer's own malt and grain whiskies. Togouchi's tunnel cellar changes little in temperature or humidity across the year, allowing maturation to progress quietly.

01

House distillation

Both malt and grain are distilled in-house to form the base of the blend.

02

Tunnel maturation

A stable environment of about 14–15°C and roughly 80% humidity supports gentle maturation.

03

Balance

Fruit, nuts, vanilla and wood are brought together without losing lift.

Taste profile

Soft sweetness with a clean, woody finish.

TOGOUCHI Whisky sensory profile

Nut and fruit notes meet vanilla and milk chocolate. Measured acidity keeps the palate composed before a smooth, woody finish.

How to serve

01

Neat

Start with the balance of aroma and texture exactly as bottled.

02

A few drops of water

A little water gradually opens the fruit and sweet oak notes.

03

Highball

Soda lengthens the clean outline and makes it easy to place with food.

Food affinities

In the direction of gentle sweetness and a clean woody note

No official food pairing is stated on this page. The four directions below are read from the recorded aroma and taste structure. Two threads run through it: a gentle sweetness leaning toward nuts, vanilla and milk chocolate, and an even, measured acidity that carries smoothly into a clean, woody finish.

Nut and vanilla sweetnessDashi-rolled omelette, khao man gai, roast chicken. The soft richness of egg or thigh meat runs in the same direction as a vanilla-like sweetness.
Milk-chocolate roundnessSimmered pumpkin, massaman curry, sautéed mushrooms. A rounded sweetness built on nuts and spice echoes the milk-chocolate note.
Soft fruit acidityGrilled fish with yuzu pepper, yam woon sen, grilled salmon. A measured acidity sits alongside the dish’s own sourness.
Clean woody finishSalt-grilled ayu, steamed fish, smoked salmon. With a lighter dish, the woody finish adds definition in the same direction.

Bringing aroma intensity and weight into alignment — a form of harmony by resonance — is described in food-pairing literature. This whisky’s gentle sweetness and restrained acidity tend to run in the same direction as dishes that let the ingredient’s own character lead, rather than heavily seasoned ones.
