SAKE HUNDRED Gengai is a vintage aged sake created by Clear Inc. and brewed by Sawanotsuru in Kobe, Hyogo. It began with sake brewed in 1995 and matured for many years in tank. An unusual shubo-shibori process gave it a firm structure of acidity, sweetness, and amino-acid depth. The profile shows amber tones, caramel, dried fruit, bitter chocolate, spice, lactic sweet-and-tart balance, a silky texture, and a long mineral finish.

Culinary affinity: Its mature amber profile, acidity, and layered umami complement aged cheese, dried fruit, dark chocolate, caramelized nuts, roasted mushroom, braised dishes, and Thai preparations with deep spice, tamarind, or roasted aromatics.
