DOMAINE AMIRAULT Le Fondis 2020 taste chart

Colour

Dark garnet

Fragrance

Typical notes of red fruits.

Taste

Slightly oaky with fine tannins.

Pairing

A perfect partner for rich stews, like pork or beef cheek with sauce, cooked for a couple of hours, or a duck confit or even with cured cheeses. Japanese cuisine: lean Wagyu steak, lightly sweetened sukiyaki, beef shigureni and duck roast. Thai cuisine: mild Massaman beef curry, mu yang, braised beef and dishes with a rich demi-glace-style sauce.

Vinification

The grapes, harvested at optimum maturity, ferment in “vinification intégrale” method into demi-muids (500L oak barrels) only with natural yeasts. Maceration 3 to 5 weeks – the barrels are turned several times a week for the first two weeks. Then the marcs is gently pressed (the skins and pips left over from maceration). The juice obtained is blended with the free-run juice and returned to the same barrels), to be matured for 18 to 24 months.
