Colour
In the glass, a festive and fine perlage, very persistent. The color is straw yellow, with slight golden shades.
Fragrance
A delicate symphony resonates on the nose, where floral and fruity sensations are embellished with touches of yeast and bread crust.
Taste
On the palate it is subtle, sensual, with a satisfying and decidedly balanced body, which relies on a fresh sip.
Pairing
Perfect as an aperitif. It goes well with elaborate fish dishes, shellfish or "amuse- bouche" (light starters). Japanese cuisine: white-fish and shellfish sushi, sashimi, tempura with salt and grilled prawns. Thai cuisine: grilled seafood, a mild pomelo-prawn salad, tod mun goong and crisp fried chicken.
Vinification
The name «Cuvée 72» comes from 36+36. 36 months on the lees, 36 months after disgorgement. 72 months of maturation. Base 2014 disgorged in May 2018.
