The design

Depth built through fermentation and distillation, not smoke alone.

Highland-peated malt at 50 ppm is fermented in Douglas-fir washbacks and distilled through the cast-metal ZEMON still. Maturation is predominantly in bourbon casks for about four years, followed by bottling at natural colour without chill filtration.

01

Wooden washbacks

Douglas-fir washbacks support fermentation that builds depth in the spirit.

02

ZEMON

The cast-metal pot still brings texture between peat and fruit.

03

Bottled at 48%

The strength preserves smoke, fruit and oak; natural colour and non-chill filtered.

Taste profile

Peat at the core, supported by fruit and weight.

Saburomaru's peat leads, layered with ripe fruit, malt sweetness and bourbon-cask vanilla. Smoke defines the profile while the palate retains weight and smoothness.

How to serve

Choose the serve to match the profile.

01

Neat

Follow the smoke, fruit and oak as they unfold in sequence.

02

A few drops of water

Water reveals sweetness and texture beneath the peat.

03

Highball

Soda keeps the smoke defined while extending the finish.

Haze or sediment may appear at low temperatures because the whisky is non-chill filtered. This does not affect quality.
Food affinities

Four directions built on peat, ripe fruit and bourbon-cask vanilla, from a 48% single malt

The food affinities for SABUROMARU IV The Emperor are not official pairings from the maker, but a reading drawn from the characteristics recorded on this page. Four directions are built around the peat that defines its outline, the ripe fruit and malt sweetness beneath it, the bourbon-cask vanilla, and the weight and smoothness the whisky keeps through the finish.

Peat and smoke outlineSalt-grilled yakitori, grilled naem (an Isaan fermented pork sausage), or smoked almonds with aged gouda. The peat that leads this single malt’s profile meets dishes carrying their own charcoal or smoke character.
Ripe fruitHoshigaki (dried persimmon), ripe mango with sweet fish sauce, or a cinnamon-baked pear. The ripe fruit layered over the peat runs in the same direction as fruit that has been dried or gently cooked rather than served raw.
Malt sweetness and bourbon-cask vanillaCastella cake, thong yod (Thai golden egg-yolk drops), or a crème brûlée. The malt sweetness and vanilla drawn from the bourbon casks sit alongside these egg-and-sugar desserts.
Weight and smoothnessKakuni (braised pork belly), phalo (Thai five-spice stewed pork), or a slow-roasted pork loin. The weight and smoothness the whisky keeps through the finish is close to the texture of these long-cooked, tender cuts.

A single malt’s peat, fruit and cask character take shape together during fermentation, distillation and maturation, echoing a dish’s own smoke, sweetness and richness. What follows is a structural reading built on that overlap, not a recommendation from the distillery.
