A transcendent finesse and ability to be both powerful and featherweight. Full of energy, the palate is fabulously silky, the quality of the tannins impresses.
Pairing
Red meat or game. The caveat against soft cheeses like Camembert, Brie and Vacherin. Japanese cuisine: duck roast, yakitori with tare, beef tataki and mushroom sukiyaki. Thai cuisine: charcoal-grilled pork or chicken, a mild duck curry, mushroom stir-fry and a light Massaman curry.
