An expressive nose of eucalyptus, baked fennel, morello cherry and dark chocolate characteristics.

Taste

Elegant, yet richly flavoured with structured, firm tannins.

Pairing

Classic pairings: grilled red meats, lamb stew, beef tongue, wild boar, osso buco and hard cheeses. Japanese cuisine: wagyu steak, sukiyaki, charcoal-grilled beef tongue and deeply seasoned meat stews. Thai cuisine: massaman nua, nua yang with mild jim jaew and lamb or beef stew with warm spices; avoid very hot green curry or nam prik.

Vinification

A fermentation of three weeks at temperature of 20°C is maintained to ensure a slow extraction, then aged in Burgundian barrels for nine months.”
