About the Wine

Domaine de Cazaban farms this cuvée from a limestone parcel in Montolieu, on the southern edge of the Montagne Noire near Carcassonne. Parti Pris is released under IGP Pays d'Aude and built from 100% Pinot Noir, a variety chosen deliberately for this particular site.

The winemaking follows a gentle, hands-off approach: partial whole-cluster fermentation, gravity movement, native yeasts, and aging in Stockinger demi-muid barrels, resulting in a wine certified Vin Méthode Nature.
